The reasons for riddling ...
Riddling is one of the seven stages needed to make champagne or other sparkling wines made by the traditionnal method :
1. Harvest
2. Pressing
3. Fermentation
4. Blending
5. Racking
6. Riddling
7. Disgorgement
Riddling is the operation specific to the champagne method. It consists in bringing together the lees produced by the second fermentation and gradually moving them down into the neck of the bottle by rotating and tilting the bottle.
Depending on the Champagne House, the riddling operations are : inversing the bottle, riddling, returning the bottle.
Some wine-growers do this by hand on pupiters, in which case the riddling can take at least three weeks for each bottle.
